Ingredients
Scaled for 4 servings.
- 1 cup Coconut milk
- 2 teaspoon Curry powder
- 3 clove Garlic
- 1 cup Lentils
- 1 each Onion
- 2 cup Tomato
Instructions
- Saute onion and garlic until soft.
- Add curry powder and toast briefly.
- Add lentils, tomatoes, and coconut milk.
- Simmer 25-30 minutes until lentils are tender.
